The Canopy brand has partnered with Proprietors, leveraging the group’s experience to aid in creating an exciting and successful bar program for Canopy Central. Led by three talented principles, Proprietors will work with you to further refine your craft and ensure your success as a Canopy Bar Enthusiast.

Craft is not perfection, it is a commitment to the small, seemingly inconsequential details that inconspicuously elevate an experience. No matter how many years of practice you have, there is always space to learn and improve. Our jobs would be exceedingly boring otherwise. Craft means taking the tools that are provided, mastering them, and making every element fit your personality and vision.
While we have guidelines that you are asked to follow, we hope you will develop and exercise an independence and personality that is uniquely.
A drink is dynamic, challenged and affected by everything around it. Understanding spirits, wine, and beer with ever-increasing proficiency is essential for anyone who steps behind this bar. After all, passion reflects commitment to your craft.
To be a hospitality professional means much more than making drinks, wielding trays, cooking entrees, and washing dishes. You are the curator of guests’ time and experience. You have all the answers, not only because it’s your job, but because your passion implores such mastery. You pride yourself in excellence, in seeing a grateful smile from a guest as they leave and in knowing that you will serve them again. Powerful stuff—not to be taken lightly.
We are creating a positive stay experience for our guest. Embedded within this comes the mastery of both the craft and the art of our jobs. Making a great drink is but one element of many. Being successful relies upon your ability to maintain a high level of working professionalism and manage your environment (with both guests and coworkers) in a way that upholds the bar’s mission.
Some say that drinks are only formulas, that anyone can make a cocktail simply by following directions. While this is technically true, the real art of a fine mixed drink is a far more complex endeavor to master. A cocktail is a collaboration of concrete and abstract elements. It is the manifestation of the personal relationship that is formed between the maker and the drinker.
Pause for a moment and remember that many of these elixirs have been made the same way for centuries. Chemistry is only one factor that ultimately impacts taste. Intangibles – like terroir in wine if you are getting fancy – are a part of every culinary experience. Recognizing, knowing, and respecting these intangibles strengthens your ability to create an excellent drink and enhance an experience.
A successful bar room is a deceptively complex organism. It is a marriage of many large and small zones that influence the guest in dynamic ways. Each speaks to the varying levels to which a customer is aware of their surroundings (and how you can impact their pleasure therein), and will help you prioritize how best to approach
any situation.
